Roasted Pineapple with Caramel and Cream Cheese Sherbet

Recipe Description:
Syrup with spices:
  1. Boil the water with sugar. Add the spices and let them infuse.
  2. Lighten the potato starch with some cold water. Then, pour it into the boiling syrup.
  3. Once thickened, remove it from the flame and store aside.
Cream cheese sherbet:
  1. Prepare a syrup with the sugar.
  2. Once it is cold, mix with the cream cheese, lemon and glucose.
  3. Strain in the Chinese and put it in the ice-cream freezer. Store.
Pineapple preparation:
  1. Prepare the pineapples.
  2. Put 4 tbsp. sugar in a pan. Heat until obtaining a caramel.
  3. Add the butter and cook the pineapples in the caramel.
  4. Roast 6-7 minutes, turning them regularly.
  5. Place the pineapples on the serving dishes. Pour the syrup with spices over it. Add a scoop of cream cheese sherbet and decorate with the spices.

  • 1.32 lbs. spices
  • 2 cinnamon canes
  • 2 vanilla pods
  • 4 cloves
  • 4 tbsp. potato starch
Cream cheese sherbet:
  • 1.87 lbs. water
  • 1.1 lbs. sugar
  • 3.18 oz. lemon
  • 0.23 lbs. glucose
  • 1.1 lbs. cream cheese
