Warm raspberry souffle

Recipe Description:
- Prepare the egg yolk with 2/3 sugar in the mixer. Add the vanilla grains from the 2 vanilla pods (cut in half, following their lengths), eau de vie and, at last, the egg whites, beaten to strong snow with the remaining 1/3 sugar.
- Place the raspberries in the middle of each of the 4 serving dishes. Cover the raspberries entirely with the mixture prepared above.
- Put these souffles in the oven at 320 degrees F for 12 minutes.
- Just before serving, pour the raspberry sauce around the preparation. Decorate with some raspberries and the mint leafs.
Serve quickly…the souffle does not wait! |

Cooking Recipe Ingredients:
- 1.3 lbs. raspberries
- 6 egg yolks
- 8 egg whites, beaten to snow
- 2 tbsp. wild raspberries eau de vie (liquor)
- 3.5 oz. (4 tbsp.) sugar
- 2 bourbon vanilla pods
Decoration: - 8 mint leafs
- 0.85 cups raspberry sauce (fresh raspberry pulp, mixed and sugared)
